Hamburger Buns

1c water (240g)
1 egg  (35g)
4T butter (55g)
2T sugar (25g)
3c flour (350g)
1/4c dry milk (30g)
2T potato flakes (5g)
1 1/2tsp salt (10g)
2 1/4tsp active dry yeast (5g instant)

740g = 8-93g buns




A1 Sauce

60g water
70g balsamic
20g Worcestershire
30g ketchup
40g dijon mustard
20g golden raisins
1/4tsp celery seed
1/8tsp black pepper
6g chili garlic sauce
1/2tsp crushed dried onion
1 clementine, juiced, and skin in the pot

Bring to a boil. Reduce heat and simmer 10 minutes or so. Strain and cool.
