 Carrot Top Chimichurri (cafedelights.com)

1/2c olive oil [100g]

2T red wine vinegar [30g]

3-4 cloves garlic [3]

1 or 2 red chiles or 1-2tsp dried [rounded 1/2tsp dried]

3/4tsp oregano

1tsp kosher salt

1/2c finely chopped parsley [carrot tops]


Excellent!!

Hamburger Buns

1c water (240g)
1 egg  (35g)
4T butter (55g)
2T sugar (25g)
3c flour (350g)
1/4c dry milk (30g)
2T potato flakes (5g)
1 1/2tsp salt (10g)
2 1/4tsp active dry yeast (5g instant)

740g = 8-93g buns

Sweet Chili Sauce (Todd Wilbur, modifed)

80g vinegar
130g sugar
4tsp chili garlic sauce (slightly heaped=30g)
1/2tsp salt
2tsp tapioca starch
2T water

Bring to a boil for 1 minute. Let cool.

We didn't have the plain sambal olek, so used chili garlic (which I'm pretty sure is sriracha that hasn't been pureed) instead, and skipped the additional garlic. This is really good on salmon.

Sweet and Spicy Garlic Shrimp Sauce

1 1/2T soy sauce
1T ketchup
1T honey
1tsp chili garlic sauce

Use as a stir-fry sauce. Saute a clove of garlic and about 1T chopped onion if desired. Good with shrimp, pork, beef, duck, venison. From Martin Yan's Chinatown Cooking.
