Cheesy Crackers (Smitten Kitchen)
6oz sharp cheddar, grated (Pride)
57g butter
65g whole wheat flour
31g ap flour
1/4tsp kosher salt
1/8tsp onion powder
Whizz til ball forms. Roll out and bake 350°F 10-12 minutes.
Definitely more Cheez-It than goldfish.
4 chicken thighs, bone-in, skinned
1/2 med onion, peeled & rough chopped
1/2 head garlic, peeled & rough chopped
2" piece ginger, peeled & rough chopped
1 Thai chile
5 cloves
1T lemon juice
1/2T coriander seeds
1/2tsp cumin seeds
1/2tsp white peppercorns
1/4tsp cinnamon
1/4tsp fennel seeds
1/2tsp salt
Blend all but chicken til smooth. Pour over chicken, cover, and marinate 1-2 hours.
Potatoes
Quarter 4 small red potatoes lengthwise & cook til just tender. Cool slightly, season & oil & bake at 400°F about 30 minutes. [Don't bother par-cooking in future, not worth the time or effort]
