 Cheesy Crackers (Smitten Kitchen)

6oz sharp cheddar, grated (Pride)

57g butter

65g whole wheat flour 

31g ap flour

1/4tsp kosher salt

1/8tsp onion powder


Whizz til ball forms. Roll out and bake 350°F 10-12 minutes.


Definitely more Cheez-It than goldfish.

 Clayton's Swedish Pancakes (Clayton Folden, A Century of Recipes - Parshall ND Centennial)

2 eggs

2T sugar

1c sour cream (240g)

3/4c cold water

1tsp salt

1c flour (150g)


Whisk eggs. Whisk in sour cream, then water. Whisk in salt and flour. Let rest in fridge for about an hour (we didn't do this). Made (16) 6" crepes. Delicious with cherry sauce.

Sweet & Sour Chicken Master Recipe

Sweet & Sour Chicken

1 fryer chicken, cut up
1c sugar (200g)
1c ketchup
1/2c water
1/2c vinegar
2tsp salt
2tsp Worcestershire
1tsp dry mustard

Mix together & pour over chicken parts in 9x13 pan. Bake at 350*F until juices run clear. Serve over rice.

Pickled Tongue 

860g tongue

Bruce Aidells' Basic Wet Brine (modified, halved)
2c hot water
230g kosher salt
100g brown sugar
25g pink salt
6c cold water

1/4c (20g) Spice Supreme Pickling Spice

Dissolve salts and sugar in hot water, add cold water and stir in pickling spice. Cure tongue in brine 5 days.

Smoked Chicken Parts (Smoking Meat by Jeff Phillips, modified)

10 large chicken wings (1515g)

1tsp cayenne
1T salt
1tsp rosemary
1T garlic powder

Sprinkle seasoning on chicken, let rest 30-45 minutes.
Smoke at 225*F-240*F for 3-4 hours.

Smoker target: 250*F
Air temp: 15*F
7 applewood pucks
12:10pm-4:25pm
