Knish
(Ratner's dough)
1/3c egg whites [1 whole egg]
2T oil [25g]
1/4tsp salt
3/4c water
3c flour [400g]
Combine & beat with electric mixer til smooth. Let rest for an hour. (Stir together, then use hook)
Filling (Smitten Kitchen)
Carmeliza a small onion. Cook 1.5# potatoes [red]. Mash together & season to taste.
