 New Mexico Chocolate Pudding (MJ's Kitchen)


3T cornstarch (26g)

1/4tsp salt

1/4tsp ginger

1/4tsp cinnamon

3/4tsp Chimayo red chile powder

4T cocoa powder (23g Hershey Special Dark)

1/2c sugar

2c milk

1/2tsp vanilla (forgot)


Whisk together all but the milk & vanilla in a saucepan. Slowly whisk in milk & heat to boiling. Boil 1 minute. Whisk in vanilla.


It was a tad thick--maybe try 2T cornstarch next time?

 Red Eye

1L Everclear

2c sugar (400g)

5 1/2c hot water


Caramelize sugar, slowly stir in half the water until blended, stir in other half water. Pour into Everclear & bottle.


This is stronger than our normal recipe. I think I'd like something in-between best.

 Whipped Cream Salad Dressing Concentrate


1 egg

1/4c vinegar

1tsp dry mustard (Coleman's)

pinch salt (Morton's Coarse Kosher)

1tsp flour

1/2c water

1/4c brown sugar (50g)

pinch cayenne


Mix dry into egg, stir in vinegar & water. Cook til thick. Mix with whipped cream to taste for fruit salads and cabbage salads.


Good, but sweet. Cut sugar in half next time.

 Beer Bread with Cheese


350g White Lily SR flour

4T butter, melted, divided (3T in, 1T on)

1T sugar

2 sticks Sargento string cheese, cubed (2oz)

1 can Hamm's


Too fluffy--more cake than bread. Needs salt

 Blackberry Almond Cake (Fika)


85g butter -- melt and let cool.


Whisk together:

2 eggs

150g sugar

1tsp almond extract


Stir in melted butter.

Sift in 140g flour, mix until smooth & creamy.

Pour into 9" pan, scatter 100g-150g blackberries on top and bake at 400*F for 20-30 minutes.


Was *very* sweet. Cut sugar by half next time.

 Never Fail Doughnuts (Gma Elaine)

3 eggs, well beaten

1c sugar (100g)

1/2tsp nutmeg

1/2c sour cream (120g)

3/4c* buttermilk (1 1/2T vinegar + 3/4c milk)

3 1/2c flour (525g)

1tsp soda

1tsp powder

1/2tsp salt


Mix in order given. Roll out and cut. Let rest 10 minutes. Fry

*If using doughnut dropper, use 1c buttermilk. (Mom says Gma only ever did drop doughnuts.)


They were too wet to roll, so we added 1/4c sour milk and used the dropper. Yielded 40 doughnuts.
