 Sweet Hot Garlic Dills

3# (plus one 4-inch) cukes

Brine

480g vinegar

240g water

150g sugar

Per Pint Jar

1 clove garlic

1 head dill

1 1/2tsp pickling salt

1 hot pepper

Cinnamon Graham Ice Cream (Jeni's Splendid Desserts)

640g 2% milk

360g cream

150g sugar

85g corn syrup

4oz neufchatel

1/8tsp fine sea salt

2tsp tapioca starch

2 sheets (4 squares) Craven Cinnamon Grahams (steeped 5 minutes)

2679g before 2578g after = 4% evaporation
