 Spiced Applesauce Cake (Smitten Kitchen)

Whisk together and set aside:

250g flour

10g powder (2tsp)

3g soda (1/2tsp)

3g salt (1/2tsp)

2g cinnamon (3/4tsp)

1g ginger (1/2tsp)

1/8tsp cloves

Cream together:

4oz butter, softened [salted]

200g brown sugar

1tsp vanilla

Beat in:

2 eggs

365g unsweetened applesauce (1 1/2c) [340g crabapplesauce]

Stir in flour mixture, then 50g walnuts, toasted and chopped (1/2c).

Bake at 350°F 35-40min. Cool in pan 15 min.

It sunk in the oven--I was questioning the amount of leavener, but figured I'd try it as written first.

Frosting:

142g cream cheese, softened

3T butter, softened [42g]

1/4tsp vanilla

120g powdered sugar

1/2tsp cinnamon

Madelaines

3 eggs (170g no shell)
100g sugar
1/4 tsp Fiori di Sicilia
150g flour
85g butter, melted (salted)
pinch salt

10-12 minutes at 375*F

Made 23, but first pan was overfilled. The first pan smelled so much like a Tobler orange that I sprinkled mini chocolate chips in the second pan. This was definitely the correct thing to do.


Applesauce Snack Cake (The Perfect Cake)

Combine in saucepan and simmer til dry:
1c apple cider or juice (juice)
3/4c dried apples, roughly chopped (75g)

Whiz 1c unsweetened applesauce with above til smooth.

Whisk together:
4 2/3oz sugar (100g vanilla)
1/2 tsp ground ginger
1/4 tsp ground cardamom
Set aside 2T of this for the topping, add 1T crystallized ginger.

Whisk together:
7 1/2oz flour (220g)
1 tsp soda

Whisk together:
1 egg
1/2 tsp salt.

Whisk sugar mix into egg mix til combined and light looking. Whisk in 8T melted butter in 3 additions. Whisk in applesauce mix and vanilla. Fold in flour.

Use foil sling in 8x8 pan. Tap pan to settle batter. Sprinkle reserved sugar on top. Bake 35-40 minutes @ 325*F. Let cool completely on rack.

Applesauce Oat Bran Muffins

Whisk together:
1 1/2c oat bran (180g)
1 1/2c flour (225g)
1 1/2 tsp powder
1 tsp cinnamon
1/2c brown sugar (100g)
1 1/2tsp soda
1/2tsp salt

Stir in:
1c applesauce (260g)
4T oil
2 eggs

Let stand 10 minutes in tin. Bake at 400*F 15-ish minutes.

Frozen Applesauce for Ryan

6-7# (Mom's big stockpot full of whole apples) Haralson apples yielded 6 pints unsweetened applesauce.


More frozen applesauce for Ryan

6# 10oz (Mom's big stockpot full) Haralson apples yielded 6 pints unsweetened applesauce.

And more frozen applesauce for Ryan.

6# 10oz apples (1# 3oz are Mom's Haralsons; the rest are from Luanne) yielded 6 pints unsweetened applesauce. This batch is slightly sweeter than the previous two.

We did end up with two cereal bowls full (total) that we ate. And actually, it's more for the niblings than for Ryan.
