 Hopelessly Inauthentic Caesar dressing (Smitten Kitchen at Home)

2T (25g) mayo

1 small clove garlic, minced

1tsp Worcestershire

1tsp (5g) Dijon

1-2T lemon juice

1/4c olive oil [50g]

Whisk together, season to taste.


Was excellent with chicken and baby spinach on a sandwich.

 Apple Crisp (9x13, Smitten Kitchen)


Crisp:

2# Braeburn apples, sliced

2T flour

1/4tsp cloves

3/4tsp Ceylon cinnamon

2T vanilla sugar


Topping:

113g butter, melted

65g vanilla sugar

65g brown sugar

80g oats

130g flour

4T sliced almonds


350°F for 45-60 minutes.

Needed more apples.

 Vanilla Pudding (CIA Baking & Pastry)

Bring to a boil:

340g milk

50g sugar

pinch salt


Whisk together, temper, and heat to a boil:

25g cornstarch

40g sugar

35g egg yolks [2]

115g milk


Stir in off-heat:

7g butter

1/2T vanilla [3/4tsp paste]


Much too sweet and also too thick. Like a too-sweet pastry cream. (Betty Crocker uses 66g sugar and 16g cornstarch--have to try that one next.) Overall, I'm not terribly impressed with this book.

 Paul Hollywood Baps

175g white wheat

200g ap flour

5g instant yeast

7g salt

30g sugar

30g butter

250g water


10-15min, 425°F.

This is the standard burger bun recipe now.

 Crispy Chickpeas

1/4c oil

1 1/2c chickpeas

2T cornstarch

2tsp lebanese 7-spice blend

1/2tsp salt

1/4tsp sugar


Faster than in the oven, but more of a pain, and I think the oven ones turn out better. Needed a touch more salt.

 it was set in a small quiet village. And these strangers showed up from the government. These strangers were former death row criminal who got turned into super soldiers by the government. They were there to fine something or someone. They ended up rounding up most the village. I think to the highschool or city hall or something and started to kill people. This one guy and girl were trying to save the town. And there was this weird guy in the village that had an underground bunker, and that's who those guys were trying to find. Idk it's been over 15 years since I read it I was in middle school or highschool at the time. The book had a red and black cover i think it had trees with a cabin on it. It was like a horror/criminal book. It was decently thick (not a young adult novel).
