Simmered 500g with enough water to cover 20 minutes. Yielded 1 1/2c juice/pulp using chinois and food mill.

Chokechile Jam

440g chopped New Mexico green chiles (2c, approximately 1.4# prior to chopping)
1c chokecherry juice
1T cider vinegar
1T lemon juice
300g sugar (1 1/2c)

Yielded 2 1/2c. Original recipe called for a box of pectin (the no sugar type). I just cooked it a bit longer (10 or 15 minutes, I think). I didn't remove many seeds (they were a medium variety, slightly milder than other mediums we've had), and it's pretty good as far as heat level. I wouldn't want it any hotter, I don't think. Most excellent mixed with cream cheese and spread on toast. Very pretty, too.

Chokecherry Juice

3000g chokecherries (about 6.7 pounds)
36oz water

Yielded 5 1/2c juice.


Chokecherry Syrup

5 1/2c juice
1/2c water
 3c sugar
6T lemon juice

I finally got syrup! Boiled 10 minutes, did freezer test. Was a bit loose yet, so gave it another 5 minutes.

Yielded (4) 8oz jars and (3) 4oz jars.

Chokecherry Jelly

1 3/4c juice
2c sugar
24.5g regular Sure Jell

Yielded 3c.

This one came in last. First was Sure Jell No sugar, second was Ball Classic.

2 1/4c juice
1 1/4c sugar
24.5g Sure Jell No Sugar

Yielded 3 1/2c.

We liked this one the best.

This one came in second. First was Sure Jell Low Sugar, third was regular Sure Jell.

Chokecherry Syrup


Pectin test seemed to indicate a medium-ish level, so we'll try 3/4c sugar to each cup of juice. I need to pectin test the crabapple juice, so I have more of a baseline.


1 1/4c chokecherry juice
7/8c sugar


Bring juice to a boil, add sugar 1/2c at a time, returning to boil after each addition. JSR (since it's just a test, and a very small amount)


Yield: We didn't quite get (2) 8oz jars filled, but almost.

Chokecherry Juice


Got 2qts plus a 1 1/2c out of 1 3/4 ice cream pails (5qt). The juice is really opaque; I wonder if it's the city water?

Crabapple Chokecherry Jelly


1c chokecherry juice
2 1/2c crabapple juice
1/2c water (rinsed out juice containers)
4c sugar


Yielded 5 cups




Ginger Peach Jam (from Gourmet Preserves)


3# peaches, peeled, pitted, & sliced
3 quarter-sized ginger slices
1T lemon juice
1/3c water
Bring to a boil; simmer 10 minutes.
2c sugar (added 1/2c at a time)
Simmer til jam thickens & liquid clears. Should reduce to about 4 1/2c. Remove ginger slices and fold in 1 1/2oz pea-sized bits of candied ginger.


Yielded 4 1/2c.


Needs more ginger slices and maybe less candied ginger.






Apple Pectin Stock
5# crabapples (we trimmed off 1/2#)
2 1/2qts water


Yielded 5c sauce and 2qts 2c pectin

Over-simmered 3# of chokecherries. Ended up with one cup of juice.
