Corned Beef
6# brisket
1 gallon water
450g kosher salt
100g sugar
25g pink salt
3 garlic cloves
20g pickling spice
Brine for 5 days.
(Wasn't quite enough--there was a sliver of uncured meat in the very thickest part)
